We will present two works, involving mainly Small Angle X-Ray Scattering. in the first one, we monitor the evolution of a plant protein conformation during digestion of a food plant protein gel, in link with observation at larger scales by different imaging techniques. in the second, we access through scattering to the conformation, and the structure factor – with the help of Doru Constantin, of cellulose chains in ionic liquids, which can be quite good solvents, and both offers an interesting basic situation and enables a sustainable processing.
